DELI MEATS AND FRUIT AN IMPOSSIBLE COMBINATION? THE CHALLENGE POSED TO CHEFS AT IDENTITÀ GOLOSE

In Milan from 28 to 30 January, in the Let’s Eat space, tastings organised by the Italian Association of Taste Ambassadors will prove otherwise

– L’Istituto Valorizzazione Salumi Italiani (IVSI) is taking part in Identità Golose, the 18th edition of Italy’s most important and one of the world’s most prestigious international congresses on auteur cuisine, pastry-making and room service.

 

The event will be held from Saturday 28 to Monday 30 January. During these three days, at Mi.Co. Milano Congressi together with the major players in the catering sector in our country and beyond, the institute will be present thanks to the European programme ‘Let’s Eat – European Authentic Taste’, promoted by IVSI and ASIAC – the Association formed by the eight largest organisations of Greek fruit producers. The Project, which started in 2021 and will end in 2024, is co-financed by the European Commission within the framework of Regulation (EU) 1144/2014 (Information provision and promotion measures for agricultural products on the internal market).

At the stand, visitors will be able to discover all the secrets of deli meats and fruit, two product families that are not only staples of the diet, but also a perfect match in terms of nutrition and taste. And it is precisely taste that will be the leitmotif, because thanks to the collaboration with the I’Associazione Italiana Ambasciatori del Gusto, three tastings by the Association’s chefs will take place every day at 10.30 am, 11.30 am and 4.30 pm. On Saturday 28, Tina Marcelli, Giulia Avitabile, and Antonino Attardi will ‘open the dance’; on Sunday 29, the creations of Pasquale Caliri, Luca Doro, and Luca Mastromattei will be tasted; and on Monday 30, Federico Ferrari, Giovanni Peggi, and Roberto Costagliola will be the guests of the event.

Speck, mortadella, cooked ham, bresaola, pancetta, coppa, will be interpreted by the chefs combined with apples, peaches, cherries, lemons, oranges. It will be a journey of emotions and memories, in which the chefs will pay homage to a memory or an anecdote, making these pairings very special!

Also distributed in the Let’s EAT space will be the exclusive Album of figurines created thanks to the collaboration with Gruppo Panini Editore: 24 pages with lots of hints and information on the European project, some curiosities on deli meats and fruit, and the original pairings designed specifically for Let’s EAT. Portrayed in the Album, as well as deli meats and fruit, are the four Ambassadors chosen as testimonials of the programme for their philosophy of life, full of style and energy, able to best represent each of the 4 cardinal ELEMENTS of the campaign: TRADITION – Carlo Cracco (chef and TV personality), NATURE – Matteo Eydallin (Ski Mountaineering World Champion), ENERGY – Paola Fraschini (World Champion in artistic roller skating), WELL-BEING – Tanya Gervasi (model and food blogger).
